Mushroom and Walnut Bolognese

Ingredients
- 200g mushrooms, quartered
- 100g walnuts
- 1 red onion, quartered
- 1 carrot, chopped finely
- 2 garlic cloves
- 1 tsp Italian seasoning
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 can chopped tomatoes
- 1/4 can of water
- 1 tbsp tamari (or soy sauce)
- 1 vegetable stock pot
- handful fresh basil
- 400g spaghetti (we use wholewheat)
Steps to Prepare
- Firstly, add the mushrooms, walnuts, onion, carrot, garlic to a food processor and pulse (don't over blend) as you want texture.
- Heat a pan with oil and add in the mince along with the dried herbs and fry for a few minutes.
- Now add the chopped tomatoes, water, tamari, stock pot, pinch of salt, pepper and simmer with the lid on for 10 minutes. Meanwhile boil the spaghetti.
- Finally, stir through the fresh basil and drained pasta and it's ready to serve.
